Tres Leches and Eeeky-Bach

Last night we celebrated one of our guy's, Anibal, birthday. They are very serious about birthdays and hurt when there is not a big ta-do. We found this out last year when we forgot Javier's. Four of them live together and on the morning of a birthday, they sing Las Mananitas and hug the birthday boy. Every now and then, we host a dinner and movie night. Last night we made pizza, watched Year One (HILARIOUS!!!) and had Tres Leches. They are amazed that I can bake Tres Leches and say it is better than what their wife can make. Now that is a compliment. I have to thank allrecipes.com though. I have tried several of their recipes for it and found that the following is el numero uno... hands down! It is so easy to make and hard to screw up unless you don't bake it long enough.

Ingredients...
1 cup white sugar
5 egg yolks
5 egg whites
1/3 cup milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 pint heavy whipping cream
Directions...
1. Preheat oven to 350 degrees F
2. Butter and flour bottom of a 9 inch springform pan.
3. Separate whites from yolks.
4. Beat whites until soft peaks form. Slowly add in 1/4 cup sugar. Beat until firm but not dry. Transfer whites to another container.
5. Beat the egg yolks with 3/4 cup sugar until light in color and doubled in volume. Stir in milk, vanilla, flour and baking powder.
6. Gently fold in egg whites.
7. Pour into prepared pan and bake for 45 to 50 minutes or until cake tester inserted into the middle comes out clean. Allow to cool 10 minutes.
8. Loosen edge of cake with knife before removing side of pan. Cool cake completely; place on a deep serving plate. Use a two prong meat fork or cake tester to pierce surface of cake.
9. Mix together condensed milk, evaporated milk and 1/4 cup of the whipping cream. Discard 1 cup of the measured milk mixture or cover and refrigerate. Pour remaining milk mixture over cake slowly until absorbed. Whip the remaining whipping cream until it thickens and reaches spreading consistency. Frost cake with whipped cream.

And now about eeky-bach...
Cecilia has been saying eeky-bach the past few days. I had no idea what she was talking about but tried to respond to her without saying "yes." (Side note... we get into trouble for saying yes when we have no idea what she is saying. Last week we consented to her watching 101 Dalmatians at bed time and had to renege when we realized what she meant when she asked, "Mam... blah dee bah moo ee bee Pongo... OK?") Today she was watching Dora and got really disgusted and kept saying, "Mam! Eeky-bach!" I looked at the screen and there was... Swiper the Sneaky Fox!
